I must admit that I was quite shocked to find a recipe shared by Tetley Tea for a healthy energy bar. I can’t quite wrap my brain around the notion of thinking about Tetley in association with health. It’s kind of like associating Coke with health, I suppose. I still harbor resentment toward Tetley for purchasing very low quality teas which they introduced to America. Do you remember their catchy slogan…something like “tiny little tea leaves in Tetley Tea”? They actually tried to make fannings – the tea dust from the cutting room floor – sound cute. Perhaps it’s time to let go of those feelings and enjoy their green tea interpretation of an energy bar. I’m going to purchase the ingredients when I do my health food shopping this week. Take a look and let me know what you think.

Here’s a recipe from Tetley using one of their green teas:

Green Tea Granola Bars

4 Mango Passionfruit Açaí Green Tea bags*
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 tsp. salt
11/2 cups quick cooking oats
1/2 cup chopped dried mango
1/2 cup dried cranberries
1/4 cup unsweetened coconut
2 tbsps. ground flaxseed
1/4 cup coarsely chopped unblanched almonds

1/4 cup sunflower seeds
1/3 cup 70% dark chocolate, chopped
2 large Omega-3 eggs
1/4 cup canola oil
1 tbsp. corn syrup
1 tsp. pure vanilla

Preheat oven to 350° F. Line a nine-inch square baking pan with foil. Coat pan with cooking-oil spray. Remove tea leaves from tea bags and place in a medium bowl. Add flour, sugar and salt. Whisk to combine. Stir in oats, mango, cranberries, coconut, flaxseed, almonds, sunflower seeds and chocolate. Set aside. In a small bowl, whisk together eggs, oil, corn syrup and vanilla. Add wet ingredients to dry ingredients and stir to combine. Spread evenly in prepared pan. Place in centre of oven and bake for 20 to 25 minutes, until edges are golden brown. Remove from oven to cool. Cut into bars. Store in an airtight container. Makes 18 to 24 bars.

Variation: Add 3/4 cup of vanilla protein powder and 1/4 cup water or apple juice to transform these into power bars – perfect for any gym bag!
